A few floors and hours into the expansive National Museum of Scotland, my friend and I, dizzy and at our capacity for absorbing new information, decided we needed a food break. Preferably something filling.

Not far from the museum, the Baked Potato Shop was indeed filling, yet also fresh. I ordered a large potato with spinach salad and cheese and onion on top. My friend ordered a large potato avocado salad along with the cheese and onion as well. Jack Johnson played on repeat in the background.

It was the atmosphere, the multitude of options, the comforting yet fresh flavor, and how filling the potatoes were that brought us back time and time again during our short stay in Edinburgh.
